Easy Party Food - Guacamole!



Here is the EASIEST (and,I think, BEST) Guacamole Dip ever!





The Headmistress’ Guacamole

Because I don’t prepare ANYTHING that’s difficult, this is incredibly simple.  The proportions are all ‘to taste.’  ENJOY!!

Several ripe HAAS avocados (I used 8 small ones for a party for 20; should have used more)
One small red onion
Several cloves garlic
Kosher salt and freshly ground pepper
Juice of ½ lime

Smash the avocados; chop onion and garlic together in mini-food processor.  Mix all together. Add a dash of kosher salt and several turns of the pepper mill (taste as you go).  Add the juice from at least ½ lime.  Mix well.  Refrigerate at least an hour before serving.  This never lasts long at parties!
Note:  no cilantro!  I’m one of the few people on the planet who doesn’t like it.  Use it if you do!
